Neue natürliche Quellen bioaktiver Moleküle für die menschliche und tierische Ernährung: Von nachhaltiger Pflanzenproduktion bis zu sicheren Mehrwert-Lebensmittel-/Futtermittelzubereitungen

Plant-based food/feed quality is a complex, multidimensional, and multi-factorial issue that depends on many circumstances. To ensure food/feed safety and quality, an application of the Farm/Field to Fork Strategy is essential. The latter strategy aims to accelerate our transition to a sustainable food system that should have a neutral or positive environmental impact; help to mitigate climate change and adapt to its impacts; reverse the loss of biodiversity; ensure food security, nutrition, and public health, making sure that everyone has access to sufficient, safe, nutritious, sustainable food; preserve the affordability of food while generating fairer economic returns; fostering the competitiveness of the EU supply sector; and promote fair trade. Numerous plants are valuable sources of high-added bioactive compounds and/or precursors. Many of these bioactive compounds (as well as their precursors) are beneficial for human and animal health and have been extensively studied by the scientific community. However, till now, systemized data about these compounds in raw materials, their conversion during technological processing, and their functionality, i.e., their biological activity and technological functionality, in the end-products are limited. Therefore, this topic is currently receiving considerable attention from researchers worldwide. This project aims to showcase the diverse range of bioactive compounds and their precursors found in plants, emphasizing their technological significance through the of the Farm/Field to Fork Strategy lens. Furthermore, this project present novel and more sensitive, selective, cost-effective, and environmentally friendly technological solutions for the valorization of plant processing by-products.
